Salisbury Steak Recipe


This is one of the simplest meals I've made and its so delicious.

Salisbury Steak



Ingredients:

- 1lb of ground beef
- 1 can of condensed French onion soup
- ½ cup of breadcrumbs
- 1 egg
- 1 tablespoon
- ¼ cup of ketchup
- ¼ cup of water
- 1 tablespoon of Worcestershire sauce
- ½ of mustard powder
- salt and pepper to tate

Directions:

- in a bowl, mix together ⅓ of the French onion soup, breadcrumbs, 
ground beef, salt, pepper and egg.
- once mixed, shape the ground beef mixture into 6 oval patties
- in a separate bowl, mix the flour and the rest of the soup until its well blended
-once blended, add the rest of the ingredients and mix
- over medium heat, in a skillet, brown the both sides of the patties
and drain fat
- add the flour mixture over the browned patties, cover and let
it cook for 20mins


* goes great with mashed potatoes!

Solar Eclipse

I dont ever remember "seeing" a solar eclipse before;
so when our FRO passed on the information about
a solar eclipse coming on Sunday, I pretty excited about it.

I obviously didn't stare directly at it, but I did
manage to capture it on my phone. 
I closed my eyes. Aimed the phone at the sun. Click...

The Drive-In

29 Palms has one of the few, still working, drive-ins. Its actually one of the few things I like about here. DH and I go quite frequently. We pack up his truck with out lawn chairs, bring Brownie and enjoy the night. Some people even bring BBQs!!!

The price is even great...two movies for $5! how great is that?!?!?! The movies are usually ones that have recently come out in the big screen. For instance, the other night we saw "The Raven" and "Cabin in the Woods".

If its a cool night, we watch the movie from inside the truck. If the night is warm, we back the truck up and place ourselves in the bed of the truck with our lawn chairs (yes, we are THAT fancy) My favorite is the latter one, because we get to be under the the stars :)

My First At Home Business Failure

Don't get me wrong, I have had some minor setbacks, but I was able to overcome them. But nothing set me up to this one.

Last Friday one of the local schools had a fair going on and you could rent a booth to sell your handmade, or in my case mark., items. Renting the booth was close to nothing compared to what they normally go for. I prepped myself and my items. I ordered enough magalogs made sure I had applicators and make-up remover for anyone who wanted to try. I also expedited deliveries just to make sure I would have them on time. I even had a raffle that all people had to do was simply enter their name.

The day finally came.

It was a huge let down.

People basically walked by my booth and said, "I don't wear make-up" (even though you could clearly see eyeshadow and lipstick on them).  Some people basically skipped my booth completely, because for them mark. wasn't anything to them.

Needless to say, I doubt I will be doing an even like that anytime soon.

BUT, the only positive thing I can tell you is that my set-up pretty much rocked :)

Mac and Cheese with Roasted Chicken

I'm all about trying to new recipes. 

I found this one and 
my mouth instantly started watering by just
reading it.

Mac and Cheese with Roasted Chicken




Ingredients:
- 1lb of any shape pasta (not spaghetti)
- 4 cups of heavy cream
- 2 tablespoons of fresh chopped rosemary or 2 teaspoons of dried rosemary
- 1 cup of cottage cheese (recipe calls for goat cheese, but DH doesn't like it)
- 2 cups of cooked shredded chicken
- salt 
- pepper

Directions:
- cook pasta according to package directions
add the cream, rosemary and salt and pepper (to taste) in a large saucepan over high heat. Bring to a simmer, then lower the heat to medium and reduce the mixture by half.
- add the chicken to the cream and bring the mixture back to a simmer. simmer for 30mins and stir continuously
- add the cooked pasta and coat
- add the cottage cheese and mix well. allow mixture to simmer and then serve!
